1.可可粉先与开水混合均匀,再加入细砂糖20克搅拌均匀备用。

2.蛋白蛋黄分离。蛋黄加细砂糖30克搅拌均匀,再分别加入玉米油和牛奶继续搅拌

3.筛入低粉。

4.用打蛋器以不规则方向轻轻拌成均匀的面糊。

5.蛋白分离到无水无油盆内,用打蛋器搅打呈粗泡状,分3次加入细砂糖(第一次加糖时加入少许柠檬汁)。

6.以快速方法搅打后。蛋白渐渐呈发泡状态,搅打的同时明显出现纹路状,最后呈小弯勾的九分发状态即可。

7.先取1/3的打发蛋白加在蛋黄糊内。

8.用刮刀稍微拌和。

9.再加入剩余的蛋白,轻轻地从容器底部刮起拌匀。

10.分成2份。

11.一份内加入可可糊拌匀。

12.把两种面糊各取一部分,把可可糊盛入模具上下方,原味面糊盛入模具左右方。

13.然后再以相反的方向盛入剩下的面糊。

14.用力震两下,放入预热好的烤箱内。烤箱先130度烤30分钟,然后转170度烤30分钟。烤好后立即取出。

15.倒扣晾凉后脱模。
